Lately I’ve been trying to stop rushing around so much. I’m really great at rushing. I’m great at rolling out of bed, putting on my face, and then running from thing to thing all day before crashing back into bed, only to repeat the process all over again. I do this a lot. It’s useful, because it means I do a lot. But it’s also a great way to get burned out on life and really unhappy with myself.
So I’m trying to realize that it’s OK to sleep in on a Saturday morning, take the time to cook and enjoy a delicious breakfast, and wear my pj’s until noon. And then maybe start doing some stuff. If I feel like it.
Today I decided I wanted an omelette. I’d never made one before. I didn’t used to like omelettes. Mostly because up until about a year ago, I didn’t like to eat eggs. (My prejudice against eggs came from an unfortunate vomiting incident when I was about four.) But now I’m getting there.
So anyway, today I actually cooked eggs for myself.

Here’s the cast of characters. I would have liked to have some feta and tomatoes and maybe some button mushrooms, and also some garlic, but the spinach-onion-pepper-cheddar combination was pretty delicious anyway. However, the main reason I took this photo was to point out that sadly, my eggs are from Meijer, not from chickens. I have a burning desire in my heart to own chickens, because chickens are adorable and they make eggs. Free-range organic fresh-laid eggs. (Yes, I realize I am well on my way to becoming a whiny localfood hipster type.) However, my dear friends keep reminding me that I am too busy to take care of chickens. I know they have my best interests in mind. They just don’t understand that free-range organic fresh-laid eggs really are in my best interests. So I’m stuck with inferior eggs.
Anyway. I sauteed my peppers and onions in olive oil, and sauteed the spinach in milk and butter until it was just a little bit wilted. Then I cooked the eggs.

Here’s my first attempt. It ended up being more of a scramble than an omelette. It tasted delicious anyways. Probably would have tasted more delicious if the eggs were free-range fresh-laid organic. Oh well. Such is life.

Success! My second attempt, which Mom got to have, turned out pretty great.
I win at cooking. I also win at relaxing on Saturday morning. Yay.
